We're looking for a creative, enthusiastic and technically-minded NPD Bakery Technologist to join our growing New Product Development team at our bakery in Lochore.  This is an exciting opportunity for someone who loves food, understands bakery manufacturing, and enjoys bringing new ideas from concept through to successful launch.

The Role

As NPD Bakery Technologist, you'll play a key role in developing and improving products across our diverse bakery portfolio, including cakes, pastry, bread and rolls, biscuits and savoury bakery items.

You'll work closely with operational, technical and process teams to create products that delight customers while meeting quality, cost and manufacturing requirements.  You'll also have the opportunity to explore emerging categories and trends, including health-focused products and beverages.

What You'll Be Doing

Product Development

  • Develop and refine recipes from concept through to full-scale production.
  • Deliver new product development (NPD) and existing product development (EPD) projects across multiple categories.
  • Conduct kitchen-based product development, trials and evaluations.
  • Assess product quality, shelf life, ingredient functionality and manufacturing suitability.
  • Maintain accurate recipes, records and project documentation throughout the development process.

Innovation & Market Awareness

  • Monitor market trends, consumer insights and competitor activity.
  • Explore new ingredients, technologies and flavour trends with suppliers.
  • Contribute to Bayne's innovation pipeline and future growth strategies.

Manufacturing & Commercial Support

  • Support factory trials and production launches.
  • Ensure products are scalable, commercially viable and operationally achievable.
  • Consider ingredient costs, yields and margin requirements during development.
  • Collaborate on continuous improvement initiatives where required.

Technical & Regulatory Compliance

  • Work alongside the Technical team to ensure compliance with food safety, allergen, nutritional and labelling requirements.
  • Support specification development and raw material approval processes.
  • Assist with shelf-life assessments and technical audit requirements.

What We're Looking For

Essential

  • Degree or equivalent qualification in Food Science, Food Technology, Bakery Science or a related discipline or experience.
  • Strong understanding of bakery ingredients, recipes and manufacturing processes.
  • Practical bakery skills and a genuine passion for food innovation.
  • Excellent communication and collaboration skills along with strong organisational and time management abilities.
  • Ability to manage multiple projects simultaneously.
  • Good IT skills, including Microsoft Excel, Word and PowerPoint.

Desirable

  • Advanced Food Hygiene and/or HACCP qualifications.
  • Experience of NPD Stage Gate processes.
  • Previous experience within a food manufacturing environment with knowledge of food legislation and industry standards.
  • Understanding of nutrition, reformulation and clean-label development.
  • Experience using Cybake recipe management systems.
